This month, we've been talking about stress spending and ways to avoid it. I've written about it on Instagram, Facebook, LinkedIn, and my blog.
Since we're focusing on avoiding stress spending this month, I thought I'd present a recipe that doesn't require any shopping because it's made with ingredients you probably already have at home.
Healthy Blueberry Banana Pancakes
Makes 2-3 small pancakes.
Ingredients:
--1/2 mashed banana
--2 eggs
--1/8 teaspoon baking powder
--1/4 teaspoon salt
--1/2 teaspoon vanilla
--1/3 cup fresh blueberries or other fresh fruit washed and chopped, if larger
Directions:
--Whisk banana, egg, baking powder, salt and vanilla together until pretty smooth. I use a fork for this so that I can mash the chunks left in the banana.
--Heat skillet over medium heat and grease with vegetable oil.
--Pour 1/3 cup mixture into the pan and sprinkle with some of the blueberries.
--Then cook until bubbles form on the top and the bottom browns.
--Flip over and cook until brown on the other side.
--Repeat with the remaining batter and blueberries.
--Eat warm.
You can serve with butter and syrup or peanut butter or just eat them plain. Enjoy!
This is my go to when I want a filling breakfast but don’t have time to cook a full breakfast. They fill me up, and I feel good after eating them.
