This month, we've been talking about the state of real estate and suggestions for navigating this tricky market. I've written about it on Instagram, Facebook, LinkedIn, and my blog.
Instead of emulating the complicated market, I opted for a recipe that was the opposite...simple. But I also wanted to share one that reminds me of my home--New Mexico.
Green Chile Cheese Toast with Tomato
Ingredients
Fresh loaf of sliced bread
Hatch green chile (chopped)
Two types of cheese – jack, provolone, swiss, cheddar (sliced)
Italian seasoning
Fresh tomatoes
Ground pepper to taste
Directions:
Lay a slice of cheese on the bread, covering the bread to the corners.
Spoon a layer of green chile over the cheese.
Cover with another layer of cheese and sprinkle with Italian seasoning.
Toast until the cheese is slightly browned and bubbly.
Remove from the toaster, cover with sliced tomatoes, and season with salt to taste.
Enjoy!
Mmmmm, this simple meal is the perfect combination of home and summer. I’m from New Mexico, so Hatch green chile always has a special place in my heart. We always have some in the freezer ready to spice up a dish. There is nothing better than a fresh, juicy tomato to get that summer taste.
